when in doubt, cook
On the menu tonight, turkey meatballs (yummier than that sounds, I promise), fresh pasta (though not homemade; house clutter preventing me from cracking out the pasta maker), and homemade cheesecake with a raspberry coulis sauce.
The cheesecake is the best part of it all. It’s a real, hardcore cheesecake—ricotta, sour cream, and cream cheese, eggs, vanilla, and some lemon juice. The. Best. Cheesecake. Ever.
Excuse me, I have to go make raspberry coulis.

I used 1/2 cup of oatmeal instead of the almonds and substituted apple sauce for the lemon juice…it was awesome!
What’s coulis?
It’s a fancy name for sauce. I think a coulis is generally a fruit reduction sauce, with the solids then strained out. So to make raspberry coulis, you mix water and sugar to make a simple syrup, add the raspberries and cook until they fall apart, then strain to remove the seeds. The result is a thick, sweet, almost transluscent sauce of a very vibrant pink color.
